Our Head Pastry Chef Pete Howes’ Red Velvet Cupcakes are guaranteed add a dash of sweet luxury to the 14th February this year.
To help you on your way to baking bliss Peter is sharing his secrets as to how to create these crave-worthy cupcakes at home!
- 115g soft butter
- 300g caster sugar
- 2 large eggs
- 20g cocoa
- 1 tbsp red gel food colouring, dissolved in a little water
- 1 tsp vanilla extract
- 300g plain flour
- 2 tsp baking powder
- 1 tsp salt
- 240g buttermilk
- 1 tbsp white wine vinegar
- 1 tsp bicarb
Cream the butter and sugar until light and fluffy then beat in the eggs one at a time. Add the buttermilk followed by the red food colouring, cocoa powder and vanilla extract and mix well. Fold in the flour, baking powder, bicarb and salt, then finally add the white wine vinegar and mix in.
Divide between 24 cupcake cases and bake at 160ºC for 20-25 minutes or until risen and springy to the touch then leave to cool.
Cream Cheese Icing
- 100g butter
- 600g icing sugar
- 230g cream cheese
Beat the butter and icing sugar together until completely combined, then add the cream cheese and beat until light and fluffy. Pipe or spoon on top of the cupcakes and decorate with raspberries, chocolate hearts, or any of your preferred sweet toppings.
